Easter Cupcakes

Just a week until Easter and one of my favourite things to do around this holiday is baking. It's a nice activity to do while there's music on in the background. So grab some of your family or friends, turn the music up and get baking! 

 





For the cupcakes, you will need:

  • 100g plain floor 
  • 20g cocoa powder
  • 140g caster sugar 
  • 1.5tsp baking powder 
  • pinch of salt 
  • 40g unsalted butter at room temperature
  • 120ml of milk 
  • 1 egg 
  • 1/4tsp of vanilla extract 
This recipe is based off of this one - chocolate cupcakes

Method:


So before starting be sure to preheat your oven to 170°(325°F) or gas mark 3. 

To start mix your flour, cocoa powder, sugar and baking powder then add your salt and butter and mix until you have a sandy consistency. you can use an electric whisk or if you don't have one you can do it by hand. 

Then separate to that whisk the milk, egg and vanilla in a jug. slowly pour half of that into the mixture and beat to combine.

Slowly pour the rest into the remaining mixture and continue to mix it for a couple of minutes. Be careful to not over mix. 

Then separate the mix into cases and cook for 20 minutes. Since these are Easter themed I went out and got these cute blue cupcake cases with white polka dots on them go with the Easter theme. 
When the 20 minutes are up, take them out and leave them aside to cool for around 10 - 15 minutes.

Decoration



So for the icing I went down a different route. Most icings like butter-cream are really sweet and that can be really sickening after one or two bites so I went and got Betty Crocker chocolate fudge icing. this has really good balance where its sweet but sickening sweet if you get me. 



When the cupcakes were cool I went ahead and got a butter knife and just swirled the icing around the top of the cupcake and made little circles and when I was happy with the icing, I went and added these Easter sugar decorations which are edible.
Now its time to sit back and enjoy your treat.
